I was born and raised in Cork, Southern Ireland. When I moved to the United States 13 years ago, I noticed that peoples perception of the Ireland I knew — THE REAL IRELAND — was, to say the least, a little distorted.
Seven years ago I began RACHEL GAFFNEY'S
AUTHENTIC IRISH GOODS. My mission is to educate and entertain people, through the RACHEL GAFFNEY'S brand
of products and interactive cooking classes.

Traditional Butter shortbread was a staple in my house growing up. I can still remember my mum making trays of the freshly iced shortbread for my birthday parties. Now I can bring the same to you. Using the finest ingredients, unsalted Irish butter, unbleached and unbromated flour, and sugar, these shortbreads are still made the same way my mum made them. I challenge you to try these melt in your mouth shortbreads... because they truly are melt in your mouth.
